MINT CHOCOLATE CHIP COOKIES

2 1/2 CUPS ALL PURPOSE FLOUR
1 TSP. BAKING SODA
1/2 TSP. SALT
2 STICKS SOFTENED BUTTER
1 CUP PACKED LIGHT BROWN SUGAR
1/2 CUP GRANULATED SUGAR
2 EGGS
1 TBS. VANILLA
1 BAG MINT BAKING CHIPS
1 CUP SEMI-SWEET CHOCOLATE CHIPS

PREHEAT OVEN TO 375 DEGREES F. LINE BAKING SHEETS WITH PARCHMENT PAPER.
COMBINE FLOUR,BAKING SODA & SALT IN MED. BOWL SET ASIDE. IN LRG. MIXING BOWL COMBINE BUTTER AND SUGARS. CREAM TOGETHER TILL LIGHT AND FLUFFY USING ELECTRIC MIXER. ADD EGGS AND VANILLA. STIR UNTIL COMBINED. GRADUALLY ADD FLOUR MIXTURE AND BLEND WELL. ADD BAKING CHIPS AND STIR TO COMBINE.

DROP BY TABLESPOONFULS ONTO PREPARED SHEETS.
BAKE 8-10 MIN. OR UNTIL EDGES AR GOLDEN AND TOP LOOKS DRY.

COOL ON WIRE RACKS AND STORE IN AIR TIGHT CONTAINER.

PEPPERMINT BARK

2 [12 OZ.] BAGS WHITE CHOCOLATE CHIPS
1 BAG ANDES PEPPERMINT CRUNCH BAKING PIECES
24 HARD PEPPERMINT CANDIES CRUSHED


LINE BAKING SHEET WITH WAX PAPER [SEE NOTE AT BOTTOM]
MELT WHITE CHOCOLATE CHIPS IN MICROWAVE SAFE BOWL AT 70% POWER FOR 1 MIN. STIR IF IT IS NOT MELT GO ANOTHER 30 SEC. REPEAT IF NECESSARY.STIRRING AFTER EACH TIME YOU PUT IT BACK THROUGH.
REMOVE FROM MICROWAVE AND ADD ANDES PEPPERMINT CRUNCH BAKING PIECES. STIR UNTIL MELTED. IF TOO STIFF TO SPREAD ADD A LITTLE MILK TO DESIRED CONSISTANCY.
SPREAD ONTO WAX LINED BAKING SHEET.SPRINKLE WITH LARGER BITS OF CRUSHED PEPPERMINT CANDY.


 LET STAND 1 HOUR OR UNTIL FIRM.
BREAK APART INTO DESIRED SIZED PIECES.
STORE IN AIR TIGHT CONTAINER.


NOTE: TO KEEP WAX PAPER FROM ROLLING UP ON YOU ON YOUR BAKING SHEET TRY BRUSHING THE BAKING SHEET WITH A LITTLE WATER.


YOU CAN ALSO MELT THE CHOCOLATE CHIPS OVER A DOUBLE BOILER ON STOVE IN SHATTERPROOF BOWL. ADD PEPPERMINT CRUNCH BAKING PIECES AFTER CHOCOLATE IS MELTED AND STIR UNTIL THEY MELT.

1 TUB PHILIDELPHIA CREAMCHEESE CHEESECAKE FILLING
1 SMALL BAG PEPPERMINT HARD CANDY [BRACH'S WORKS BEST]

SLICE AND BAKE COOKIE DOUGH ACCORDING TO PKG. DIRECTIONS.
COOL COMPLETELY.
PUT ONE HEAPING COOKIE SCOOP OF CHEESECAKE FILLING BETWEEN 2 COOKIES AND SQUISH TOGETHER TILL IT COMES OUT SIDES. ROLL IN CRUSHED PEPPERMINT CANDY.

STORE IN AIR TIGHT CONTAINER IN REFRIDGERATOR.
